Having a toast on your plate for a breakfast after a while turns out boring 😦 Bread is one of the favourites at our home and hence I have to give my brains a bit of an exercise on what should it be next paired up with? After coming across the fruit and bread combination for a while, I finally went ahead with the nectarine and toast combination. There are many nutrients in nectarines that promote healthy skin and one of them is vitamin E, which can act as an anti-inflammatory and also protects skin from free radical damage caused by ultraviolet light. So perhaps one of the best options to start a day with! The other ingredients here are also a source of Vitamin E and hence lets consider this breakfast to be a powerhouse of Vitamin E. Ricotta is drained and not pressed like hard cheese and hence contains whey retaining more proteins in it. It contains less fat and almost as much protein as egg whites. Well, this is all great news if you love cheese and don’t consume eggs. I have used a wholemeal bread but you can go ahead with any breads, would love rye bread toast!
Try this very quick and easy slice of nutrients to kick start your day!!
1 heaped teaspoon ricotta cheese
1 slice of bread
½ a ripe avocado
1 ripe tomato
1 teaspoon toasted pine nuts
1 sprig of fresh coriander or basil
- Spread the ricotta cheese over the toast.
- Finely slice the nectarines, avocado and tomato and toss with some lemon juice.
- Season to taste and arrange on the toast.
Sprinkle over the pine nuts and a few fresh coriander/basil leaves, if you’ve got them.
