Vegetarian Meatballs

Most of the stories I came accross during school, somewhere had a sentence that would say “meatballs smelt amazing” or “a girl was hungry and passed by a shop where she saw beautiful meatballs” etc etc. Being a Hindu, I have been vegetarian and always had this curiosity of how delicious would meatballs be or what would they taste like? Well, after being a grown up foodie, I obviously figured out what this meatball was all about. Still being a vegetarian, I created this vegetarian version of meatballs. Well, we obviously don’t get the taste of meat but have tried to add the rest of the flavours with some blend couscous. You could skip that though. Try and share what do you think about it?!

Ingredients

400g tin cannellini beans, rinsed & drained
1 large egg
50g parmesan
1/2 tsp dried oregano
1 clove garlic, crushed
1/2 cup breadcrumbs (or gluten-free if required)
juice of 1/2 lemon
400g tin crushed tomatoes
1/4 tsp chilli flakes
1/3 cup couscous (if gluten-free, try gluten-free couscous or brown rice)
100g mixed lettuce leaves
2 tsp balsamic vinegar

Method

1. Preheat oven to 200°C and line a baking tray with baking paper.
2. In a food processor, pulse together beans, egg, parmesan, oregano, garlic, breadcrumbs, lemon juice and zest. Form into heaped tablespoon balls and bake for 15-20 minutes.
3. Meanwhile, in a small saucepan over medium heat, simmer tomatoes and chilli seasoned with salt and pepper for 5 minutes.
4. Place couscous in a small bowl with 1/3 cup boiling water and 1/4 tsp salt, then cover and set aside for a few minutes. Fluff with a fork.
5. To serve toss balls in the sauce well, place over couscous and serve with lettuce dressed with vinegar.
Tips: you could make it more spicy or add your own flavours into the tomatoes
