Lentil & Spinach Curry

We all may have someone in the house who loves rice! I too have one at my home and that’s the reason I look for rice recipes and its accompaniments. Being an Indian, my lunch or dinner will surely have a lentil(well this is changing now) but there are likes and dislikes and that’s what creates a limit to the list. I love yellow lentils and can have them any time. “Daal palak” is common but this recipe might look weird because of the “almond meal” but trust me, it changes the entire taste and increases the richness. Considering the 3 main ingredients lentil, spinach and almonds, its a perfect bowl of nutritions especially if its for your little one or you are expecting a little one!! Go for it anytime and you will love it. The best part is rice is not mandatory, you can have a bowl on its own too!!


2 tsp coconut oil
1/2 tsp cumin seeds
1 red onion, finely chopped
2 cloves garlic, crushed
1/2 tsp ground coriander
1/2 tsp ground ginger
1/2 long red chilli, chopped (optional seeds removed)
1 medium tomato, roughly chopped
1/2 cup split yellow lentils, washed
2 cups vegetable stock
1/3 cup almond meal
2 cups baby spinach leaves
juice of 1/2 a lemon


1. Heat coconut oil in a saucepan over medium heat and toast cumin seeds for a minute or two until fragrant. Add onion and continue to cook for a few minutes, until onion has softened. Add garlic, coriander, ginger and chilli and cook for a few more minutes.
2. Add tomato and cook for another minute. Add lentils, stock and almond meal and bring to the boil and continue to simmer for 25 minutes.
3. Stir through spinach, add lemon juice, adjust seasoning and serve with some steamed rice or bread or dip like tzatziki or just some yogurt or the best option, have it on its own!!
1. If almond meal is not available readily, crush some almonds in a foos processor. In short all you need is powdered almonds.
2. Yellow lentils can be any one of your choice.
3. If preplanned, you can soak lentils in water for about 30-60 minutes and it will cook faster. If possible, prefer the recipe above since the lentils will absorb the flavours while cooking and that will make it taste much better.
4. You can have any other lentil that is available, can use canned lentils or can even use a combination of lentils
