Cabbage and Spinach Vegee Fritters

I have always been in love with finger foods sjnve they are quick and easy to make, less time consuming, has good flavours and can be served hot/cold. All that this recipe needs is a couple of greens from your fridge and thats it. Perfect for a quick breakfast or a party on tray or a light supper!!

Ingredients

2 eggs
100g haloumi, grated
2 spring onions, finely chopped
1/4 bunch parsley, roughly chopped
salt & pepper, to taste
90g finely shredded green cabbage
50g baby spinach leaves, roughly chopped
2 tsp olive oil
Juice of 1 lemon
1/4 cup tzatziki

 

Method

1. Whisk eggs, haloumi, onions and parsley together. Season with salt and pepper.
2. Stir through cabbage and spinach.
3. Heat oil in a non stick fry pan over medium heat and spoon 2 tablespoons of mixture per fritter into the pan. Cook for 3 minutes, turn and cook for another 2 minutes, or until golden. Keep fritters warm and cook remaining mixture.
4. Divide between two plates, squeeze over lemon and serve with tzatziki.
