Vegetable Lettuce Wraps

Most of the times I would end up wasting my lettuce since I would buy and just end up using few leaves into my salads and the rest remains till I make something again and if that does not happen sooner, the lettuce is a waste. This can happen with many vegetables that stay in our fridge for a while and then the last option is they go into the bin 😦

Here’s something quick, easy and a recipe that would help you use your unused vegetables in the fridge. A perfect starter recipe or a snack for yourself. That flavour of charred corn is something irresistible.

Ingredients

2 tsp olive oil
1 corn on the cob
1 tomato, diced
1/2 celery stalk, finely chopped
1/2 long red chilli, seeds removed & sliced
1 spring onion, thinly sliced
1/4 cup coriander sprigs
1 tsp vinegar
2 iceberg lettuce leaves
60g feta, crumbled
2 boiled eggs, skin peeled and sliced

Method

1. Preheat a grill or fry pan on high heat. Brush corn cobs with oil, then cook, turning occasionally until slightly charred and cooked through, about 10 minutes.
2. Slice corn kernels from cob once cool. Gently toss tomato, celery, chilli, spring onion, coriander, vinegar, oil and corn together. Season with salt & pepper.
3. Place filling in lettuce leaves and top with feta and eggs to serve.

Tips:
1. you can use cabbage leaves as well in case lettuce is not available.
2. Not necessary to use the above mentioned vegetables, you can use anything that suits you or that is available in your fridge.
