Chickpea Fritters

When there is that dark cloud in the sky, a cool breeze, you are heading home after a busy day at work, you want something to warm up your body but then you don’t want to spend hours in the kitchen nor want to drive few kms to a restaurant, you can absolutely go for something like fritters. They are one of my favourite forms of starters or a quick snack or a light dinner. This recipe uses chickpeas and is served with just plain yogurt! Almost everything is available in your pantry. So try these and a few more that will soon come up 🙂



400g tin chickpeas, drained & rinsed 100g baby spinach leaves, 1/2 roughly chopped 1 large egg 1/2 small brown onion, finely chopped 1 1/2 tbs cornflour 1 clove garlic, roughly chopped 1/2 tsp ground cumin 2 tbs olive oil 1/4 cup frozen peas, defrosted 2 tsp lemon juice 1/4 cup Greek yoghurt



1. Combine half of the chickpeas, egg, chopped spinach, onion, flour, garlic, cumin, salt & pepper in a food processor and blend to form a paste. Stir through remaining chickpeas.
2. Make fritters with 2 tbs of batter each, and flatten into patties.
3. Heat 1 1/2 tbs of oil in a frypan and cook fritters a few minutes on each side, until golden.
4. Toss spinach with peas, lemon juice and remaining oil, season with salt and pepper. Serve with fritters and yoghurt.
