Sauteed Mushrooms & Cream cheese Bruschetta

Along with other Bruschetta recipes on this blog, here is one more that I really like. I have a special love for cream cheese because of the softness, the taste and because its one of the best cheese that I can use in desserts!! Why not try out on a generous piece of bread? Go for this super quick recipe. maybe give it to your kiddos in the tiffin or pack up yours!!


1 tsp butter
150g mushrooms, sliced
2 slices wholegrain, sourdough or gluten-free bread
1 clove garlic, cut in half
1 tbs cream cheese
1 sprig fresh thyme


1. Heat butter in a non stick fry pan over medium heat. Add mushrooms and saute for 5 minutes, stirring only once or twice. Add 2 tbs water, season with salt & pepper, stir well, scraping any caramelized bits from the pan and continue to cook until water has evaporated.
2. Toast bread, then rub toast with cut side of garlic. Spread with cream cheese, top with mushrooms and thyme leaves to serve.
