Bruschetta is one such thing that I can have as any one of my meal. It has bread which has the required carbs, cheese that has fats and tomatoes and onions with the other few vitamins & minerals. In short, a complete pack of nutrients for a few hours and the simplest of dish since there is no cooking but just a bit of assembling. Here is one such that I prefer for breakfast. It is a bit different from the typical Bruschetta that we have on our plates. Hope you try and enjoy!!
1 tsp olive oil 1/4 brown onion, finely chopped 6 cherry tomatoes Half 400g tin cannellini beans, drained & rinsed salt & pepper, to taste 1 slice wholegrain or sourdough bread (gluten-free if necessary) 2 tsp grated Parmesan 1 sprig fresh thyme, to serve
1. Heat the oil in a small saucepan or fry pan over medium heat and saute onion for a few minutes or until soft. Add cherry tomatoes and beans and cook gently for a couple of minutes until tomatoes are starting to soften. Season with salt and pepper.
2. Toast bread and top with beans, tomatoes and thyme, with a sprinkle of Parmesan.
