Peanut Butter Protein Bars

We always crave for some snacks during the day. people like me, crave at night as well!! So I make these little bars which are even good filling option for the 3:00pm sugar intakes. I most of the times need some 3 o’clock sugar when at work. Very quick and easy to make. store them in air tight containers. stays fresh till about 10 days. I usually double the recipe since I and my husband both are fond of these and keep some at work. It lasts good till the end of the week.

Ingredients

1/2 cup crunchy peanut butter, no added fat, sugar or salt
1/4 cup honey
1 tsp vanilla extract
1 1/2 cups rolled oats, blitzed to flour
1/2 cup protein powder
1/2 cup puffed rice
1/2 tsp salt

Method

1. Line a 20cm square tray with baking paper.
2. Warm peanut butter, honey and vanilla in a saucepan or microwave and stir until blended.

3. Combine oat flour, protein, puffed rice and salt in a medium bowl and stir through peanut butter mixture. (you may need to add a splash of water)
20170305_110652              4. Press mixture into pan, cover with more paper and smooth
out and compress with a pastry roller or jar.                           20170307_140349
5. Freeze for 20 minutes before slicing into equal pieces.
Tips:
if puffed rice is unavailable, you can add 1/2 cup oats to replace it. make sure you measure 1/2 cup and then blitz to flour.
