Caprese Panini

The classic combination of mozzarella, tomatoes and basil is known as caprese, which takes its name from Italy’s island of Capri. Try out and enjoy..



2 slices wholegrain (or gluten-free) bread
1 tsp basil pesto
15g baby spinach leaves
1 medium tomato, sliced
40g mozzarella, grated
few slices of a small red onion, finely chopped


1 Preheat a sandwich press.
2 Top one slice of bread with pesto, spinach, tomato, cheese and onion. Season with salt    and pepper and top with other piece of bread.
3 Toast sandwich for a few minutes or until golden and cheese has melted.
4. Serve the hot, grilled yummy panini with any sauce or best is to have it on its own.
