“Panini” is a word of the Italian origin. Yess…. once again Italy on the plate. This sandwich is one of its own kind and can be eaten anytime of the day. As soon as we hear sandwich, all we imagine is stuffing between 2 slices of bread. Well, this sandwich is an exceptional since for this, you can use any bread other than bread slice!!! Interesting, isn’t it? The main ingredients for Panini are bread, salami, ham, cheese and mozzarella. Here, I have the vegetarian version which is made a bit more interesting by adding grilled vegetables as the ingredients. The most used bread types for Panini are baguette, ciabatta and michetta. Lets get started.
Recipe: (makes 2 sandwiches)
Any Good quality bread other than bread slice. I have used sourdough bread
1/2 Zucchini, thin slices (refer images below)
1/2 Red bell-pepper, cut into strips
1/2 yellow bell-pepper, cut into strips
1/2 eggplant(thin slices)
2-3 slices of mozzarella
butter to spread
salt and pepper to taste
Heat a non-stick pan with few drops of olive oil and roast the bell-peppers till they shrink and are grilled properly. When done, place them on a plate and roast eggplant slices and zucchini slices on the same pan. After they are grilled, apply butter on the bread and place all the vegetables, mozzarella slices, sprinkle some salt & pepper and grill the sandwich in the sandwich grill. Serve hot with your choice of condiments or you can have it by itself since it tastes amazing on its own with all those flavors of the grilled vegetables. The stuffing is completely optional. You can use any of your choice. This recipe is specifically if you like the grilled flavors of the vegetables. Zucchini and eggplant taste the best when grilled. Its healthy and filling and hence for me, its best eaten as breakfast.
You can have it as a snack, breakfast, light dinner or brunch as well. Isn’t that the best option to cook!! Hardly takes 15 minutes to prepare and cook.
